Zingiber officinale (edible)

Plant with long and narrow leaves. We harvest the rhizomes starting in September when the nights are cooler. The rhizome’s appearance is somewhat different from what is found at the grocery store, as the summer season is not long enough for it to reach full maturity. That said, it can be consumed young without worry: its flavor is more pronounced, but it does not keep as long. 30 inches.
